Winter Warmers – Spiced Pumpkin Soup

There is nothing better on a cold day than a warming soup!

Our Client Service Manager and Technology Specialist Alison shares her famous pumpkin soup recipe:

INGREDIENTS

1 average sized Butternut pumpkin, deseeded and cut into chunks
2-3 smaller potatoes, peeled and cut into chunks
1 medium sized onion, chopped
2 cloves of garlic, chopped
2 tsp of curry powder
1 tsp of ground coriander
1/2 tsp of ground ginger
1/4 tsp of ground cinnamon
6 cups of chicken or vegetable stock
Olive oil
Salt and Pepper
Croutons and Thyme for garnish

METHOD

In a large saucepan, add olive oil and onions and sweat until soft.
Add the pumpkin, potatoes, garlic and spices. Fry on a low heat for about 5-8 minutes.Pour in the stock and simmer until the pumpkin and potatoes are tender and soft (about 10-12 minutes). Using a hand blender, puree the mixture until smooth and creamy. Add salt and pepper to taste. Garnish with croutons and fresh thyme.
